Right now, the sheep have the best view on the farm.

While the vines rest through winter, they're busy grazing between the rows, naturally managing the vineyard floor before budburst arrives.

If you're visiting this weekend, keep an eye out they're usually not too far from the Cellar Door!

Every week, Chef Harry and the team work with what's coming out of the Kitchen Garden, shaping dishes around what's at its best rather than the other way around.

The farm sets the pace. We simply cook what's ready.

Join us for lunch this weekend.

Long before there was a wine, there was a friendship.

During vintage in the Hunter Valley in 1991, Andrew met German winemaker Ado Huesgen, who had travelled from Germany to experience an Australian harvest. Although they returned to opposite sides of the world when vintage ended, the friendship continued for decades.

It wasn't until years later, sitting together in the Mosel overlooking the vineyards, that the conversation shifted from 'we should do this one day' to 'let's make a wine together.'

It's a journey the Margan family now makes every year.

From vineyard rows to vegetable beds, the kitchen and finally the table.

Everything here is connected. That's what farm-to-table has always meant to us.

Whether it's a tasting, a long lunch or simply a glass of wine overlooking the vineyard, we'd love to see you this weekend.

This week, the Newcastle Herald spent time at here at the farm to learn more about the philosophy that underpins everything we do from the way we farm to the way we welcome guests.

As Ollie shares in the feature:
"We are custodians of 70 hectares of soil used for agricultural crops. Depleting this soil, I feel, is an irresponsible use of a natural resource."

It's a thoughtful conversation about stewardship, farming and the responsibility of caring for the land that sustains us.

Thank you to Lisa Rockman and the for telling our story.

New beds are being mapped out, the Orchid area is due for a refresh, and the winter vegetables are still producing in abundance.

Some of the broccoli is now about the size of a human head!
