New in the cabinet tomorrow (Wednesday) Strawberry Gum 🍃🍓
Strawberry gum is a eucalyptus native to the New South Wales Tablelands. Its leaves smell like ripe berries with a little warm spice. We steep them into fresh milk and churn the base into a gelato that tastes like summer berries, though there isn’t a single strawberry in it.
Our tip is to pair it with a scoop of dark chocolate. It’s like chocolate-dipped strawberries, only wilder and more fragrant, with a gentle spice that lingers.
It’s the newest flavour in our native range, our way of honouring the plants that grew here long before any of us.

Gianduja has a rebellious streak. 🎭🌰
Turin, early 1800s. A puppeteer’s act was poking a little too much fun at Napoleon, so he quietly swapped in a new star: Gianduja, a quick-witted Piedmontese peasant with a tricorn hat, a love of pranks, and far more sense than he let on.
Years later, when Napoleon’s blockade made cocoa scarce, Turin’s chocolatiers stretched it with local hazelnuts, and named the delicious result after their favourite troublemaker.
Two acts of defiance. One very smooth scoop.
