I’ve always made our pasta in-house. It’s something I’m really passionate about. 🍝

I recently had a go at using organic flour, but it just didn’t give me the result I wanted.

For me Australian durum flour is hard to beat. I love the quality, I love working with it and most importantly it makes great pasta.

Sometimes you try something new and realise what you were using in the first place was pretty bloody good. 👨‍🍳🇦🇺🇮🇹

Many notable figures frequent Tartufo, yet the ambiance is particularly special when a dear friend stops by; the restaurant’s warm welcome is always a given, a testament to the wonderful nature of my friend Con Castrisos.
