Omni roasting is about more than achieving a particular roast colour. It involves carefully controlling roast development to balance sweetness and espresso extraction with the acidity, aromatics and origin character that make a coffee equally enjoyable as filter.

5 things to know when choosing coffee.

1. Washed tastes clean and bright.
Natural can taste fruity and jammy.

2. Higher altitude usually means more acidity and floral notes.

3. Anaerobic processing often means bigger, more fermented fruit flavours.

4. If you buy two different coffees from the same region, you can compare how different processing and varietals can change a coffee’s character.

5. Buy coffee roasted in the past 4 weeks.

Our current Guatemala single-origin coffee comes from Antigua. Not only considered Guatemala’s most renowned region for producing premium coffee, but also a place of bustling markets, and striking architecture.

With sweet notes of apple, butterscotch and white florals, this coffee represents the vibrancy and beauty of its region.

We lost 13.6% of this coffee when we sample roasted it yesterday.

That’s normal.

Most of the loss comes from evaporating moisture, and the remainder is mostly carbon dioxide produced by chemical reactions in the bean, along with chaff, the papery outer skin that flakes off during roasting. Green coffee in specialty grades usually holds 10 to 12% moisture.

After all that, we run the roasted coffee through a destoner and hand-sort it, pulling out any defect beans.

We buy green coffee by weight and sell it roasted, so this loss is simply part of the process. It’s one of the reasons roasted coffee costs more per kilo than green.

We drink a lot of coffee every week, most of it our own.

It’s how we know every lot, from the varietal and process to the profile in the cup. Not just at the cupping table, but across a full week of brews.

So when we recommend a coffee, we know exactly what you’ll taste.
