Journal Entry from the Engine Shed ...

"The Pie That Forgot the Meat."

I remember an old baker telling me something when I was just a young bloke.
"A pie can be heavy without being honest."
At first, I didn't understand what he meant.
He cut two pies in half and laid them side by side. One was thick with gravy and looked full enough from the outside. The other was packed so tightly with slow-cooked meat that it barely had room for anything else.

He tapped the first pie with his knife.
"This one carries its weight."
Then he tapped the second.
"This one earns it."
I've never forgotten those words.

These days, Australian food regulations say a meat pie only needs to contain 25% meat flesh by the total weight of the pie. That's the standard.
But standards aren't where pride begins.

At the Steamhouse Café, our brisket fillings are consistently made with around 70–80% slow-smoked brisket. The rest isn't there to make it look bigger—it's there because every great brisket deserves good company. Rich cheeses. Smoky bacon. A house-made gravy that knows its place.

The brisket is still the hero.

Because a proper pie shouldn't leave you searching for the meat.
It should leave you wondering how they managed to fit so much of it inside.

As another busy school holiday week comes to an end, we just wanted to say thank you!

To our amazing Branxton locals, our loyal regulars who support us week after week, and to everyone who jumped in the car and made a special trip just to try our jumbo pies, pastries and baked goodies... we're genuinely grateful ❤️

Knowing that people are choosing to make the drive—not because they're passing through, but because they wanted to experience what we're creating here at the Steamhouse Café—means more to us than words can say 🙏
