Winter Comfort Chicken & Potato Stew* 🍲✨
Warm. Rich. Hug-in-a-bowl food.

You’ll need:
1kg chicken thigh, cut in chunks
4-5 red potatoes, cut 4 ways
1/2 red capsicum, 2 shallots, 1 spring onion, 3 garlic cloves
1 celery stalk

- Spices:
2 star anise, 4 cloves, 1 tsp cumin, 1/4 tsp nutmeg, 1 tsp black pepper, 1 cinnamon stick

- Sauces: 250ml chicken stock, 4 tbsp sweet soy kecap manis, 2 tbsp soy sauce, 3 tbsp Worcestershire sauce
- 3 tbsp olive oil

*How to make it:*
1. *Fry potatoes first* till just golden. Set aside. This keeps them whole + creamy inside.
2. *Sauté the aromatics*: spring onion, shallots, garlic + all spices till your kitchen smells like heaven.
3. *Add chicken* + all sauces + stock. Simmer 20 mins with lid on till chicken is half tender.
4. *Toss potatoes back in* + capsicum + celery. Cook till sauce thickens + potatoes are soft.
5. *Salt to taste*. Top with crispy fried onions if you’re feeling fancy.

*Serve hot* with fluffy jasmine rice + Bella’s homemade pickles on the side.

*Creamy Leek & Potato Soup*
Cozy, simple, and perfect when the weather gets cool😘

Ingredients* - serves 2 -3
- 2 leeks, cleaned and sliced
- 8 potatoes, peeled and diced
- 2 tbsp olive oil
- 1 tbsp butter - added at the end
- 300 ml milk
- 200 ml vegetable stock
- 1 clove garlic, minced
- 1 tsp grated ginger
- 1/4 tsp grated nutmeg
- Salt & black pepper, to taste
- Fresh herbs for garnish

Method
1. *Sauté the base*: Heat olive oil in a pot over medium heat. Add leeks, garlic, and ginger. Sauté until soft and fragrant, about 4-5 mins. Don’t let them brown.
2. *Add potatoes & stock*: Toss in the diced potatoes, pour in the vegetable stock, and simmer until the potatoes are tender, about 15 mins.
3. *Blend it smooth*: Use a stick blender or regular blender to blend until creamy. If you like it chunky, just blend half.
4. *Finish it off*: Pour in the milk, add butter, nutmeg, salt, and black pepper. Stir gently until everything is warm and silky. Don’t boil after adding milk.
5. *Serve*: Ladle into bowls, top with fresh herbs, and serve with toasted bread on the side.

Banana Muffins Recipe
Makes 7 muffins

Ingredients:
- 2 ripe bananas
- 1/3 cup sugar
- 1 egg
- 1 tbsp melted butter
- 1 cup self-raising flour
- 1 tbsp milk
- Pinch of salt

Method:
1. Mash bananas, add egg, sugar. Whisk with fork until smooth.
2. Mix in melted butter, self-raising flour, milk, and salt until just combined.
3. Divide into muffin cups.
4. Bake at 180°C for 20 minutes or until golden.
