Winter Comfort Chicken & Potato Stew* 🍲✨
Warm. Rich. Hug-in-a-bowl food.
You’ll need:
1kg chicken thigh, cut in chunks
4-5 red potatoes, cut 4 ways
1/2 red capsicum, 2 shallots, 1 spring onion, 3 garlic cloves
1 celery stalk
- Spices:
2 star anise, 4 cloves, 1 tsp cumin, 1/4 tsp nutmeg, 1 tsp black pepper, 1 cinnamon stick
- Sauces: 250ml chicken stock, 4 tbsp sweet soy kecap manis, 2 tbsp soy sauce, 3 tbsp Worcestershire sauce
- 3 tbsp olive oil
*How to make it:*
1. *Fry potatoes first* till just golden. Set aside. This keeps them whole + creamy inside.
2. *Sauté the aromatics*: spring onion, shallots, garlic + all spices till your kitchen smells like heaven.
3. *Add chicken* + all sauces + stock. Simmer 20 mins with lid on till chicken is half tender.
4. *Toss potatoes back in* + capsicum + celery. Cook till sauce thickens + potatoes are soft.
5. *Salt to taste*. Top with crispy fried onions if you’re feeling fancy.
*Serve hot* with fluffy jasmine rice + Bella’s homemade pickles on the side.
