CHICKEN, VEGGIE & RICE EXTRAVAGANZA

I don’t play by the rules, nobody else’s, not even my own.

I’m not even sure what you would call this, but the flavours are beyond next level and me funky socks jetted to the moon. Plus I think it’s relatively healthy so bonus points to you from the man upstairs✔︎

I’ll keep this brief.

Start with lightly frying up as much garlic (all of it) as you want with plenty of quality olive oil, add a handful of finely chopped spinach, cabbage and carrot. Don’t let the garlic go brown so keep a close eye on it. Scrap this into a bowl and set aside.

Y’all know how to cook rice on the stove aye? But did you know you can also chuck in corn kernels with it and both will cook beautifully? Get this cracking now.

Using the same frypan, which is now primed in delicious garlic oil and veggie residue, throw in 1 x chicken breast fillet sliced into the proportions fit for human consumption on high heat. Mine were quite large bc I like it chunky and bc I want to be able to efficiently shovel this down using only a fork.
Liberally sprinkle chilli flakes, mixed herbs, salt & pepper.
When the chicken is looking halfway through add chunky slices (again think fork sized) of cucumber and some cherry tomatoes. Give it a swish.
Squiz a decent amount of lime into the pan and chuck in the bowl of garlic and veggies from earlier and stir it all through.
Season with reason.

Serve it up with your corn and rice and believe me when I say it will take you places.

Mad props for anyone who comes up with a killer name for this one!

CHICKEN AND VEGE SOUP

F**k this winter bu****it. This soup is delicious and really easy to make.�Drumsticks, carrots, celery, corn, turnip, parsnip, potato, red chilli, garlic, onion, 1L stock, 500ml water, salt and pepper.
Chops it up and get all this into the largest pot you have, or a pressure cooking preferably, and get the lid on it post haste. Bring it up to a boil for a bit and then reduce it to a medium-low heat for at least an hour. You can slow cook the bastard allowing the flavours to fuse over time. You’ll end up a darker and richer stock and really succulent fall-off-the-bone chicken and veggies. It gets even better as time rolls over. I can’t think of a better thing to make on the cheap. It’s delicious, easy to pull together and comes with heaps of servings. Every mother will approve. And your gut will thank you. Big pants styles✔︎

SEEING DOUBLE
Perfect in a flash for breakfast, lunch or dinner.

3 egg scram with wilted baby spinach, sliced carrots and red capsicum. So bloody good if you follow a couple of steps mate.

One. Start with frying the carrots on med-high heat. Give it a couple of minutes and then add the capsicum and mix it through for a bit longer. Scrap this onto a plate and return the pan to the cooktop.

Two. Add some butter and slowly cook 3 big handfuls of baby spinach on medium heat until it starts to decrease in size. Crack 3 eggs directly into the pan with the spinach, start scrambling and season liberally. Saddle the eggs up next to the veggies and be prepared to throw down.

BOWLS and lots of them. The idea is go simple or splice it up a touch.

Grab a quality smooth and creamy yogurt, and combine whatever fruit you have that’s looking ripe. Banana and blueberry is always a winner. The mangos are amazing right now. Berries in general—bravo.

Try adding in bits like seeds and nuts, muesli or granola, bacon, good peanut butter, choccy or honey depending on how naughty or civilised you’re feeling. Any combination will be radically delicious and potentially change lives. Hop to it mate. Lots of love.

3 EGG SCRAM W/ CARAMELISED BACON AND BABY SPINACH🤙


The best thing about cooking up a pile of bacon from the night before is it’s even better the second time around, but that’s if you have any leftover to begin with. If you do, then this is good news. Gently reheat the bacon on medium heat until it’s softly bubbling. Allow this to go for a minute or two and then chuck in some left-over potato gems, baby spinach and season—well.

Give it another couple of minutes or until the spinach starts to wilt then plate-up all that deliciousness. Return the pan to the burner and add a bit of olive oil or unsalted butter. Crack 3 large eggs directly into the pan. Gently stir the eggs to avoid a giant fried egg situation (although that sounds delicious). Chuck in another handful of baby spinach and season. Keep stirring until it’s reached your desired texture.

If you cook the scram on medium heat, you’ll get a lush, creamy and delicious scram. Try not to inhale it like I did.
