For hundreds of years, shiitake mushrooms have been a popular food source in Asia. In fact, they’re the second most popular and the third most widely cultivated edible mushroom in the world.

Shiitakes have a meaty texture and woodsy flavor, making them the perfect addition to soups, salads, meat dishes and stir-fries. Shiitake jushroom are also a popular meat subsitite. They’re often used in Japanese recipes, along with oyster mushrooms and maitake mushrooms.

As far as nutrition goes, the U.S. Department of Agriculture reports that 100 grams of raw shiitake mushrooms contain about:

Beauty Mushroom: I actually grew up with Tremella , we cooked all the time in Winter season as hot soup, or Summer season as chilled soup. We had this soup as breakfast, or dessert soup after lunch/dinner.

People in Asia have consumed tremella mushroom for centuries. When ingested, this snow fungus can provide numerous benefits for the skin. Tremella mushroom contains a unique type of polysaccharide called Tremella Polysaccharide (TP), which has been shown to stimulate the production of hyaluronic acid in the body.

Let me share a recipe: Snow fungus sweet soup (Serves four to six) from SBSFOOD SBS Food

Ingredients

- 50 g dried snow fungus
- 10 red dates, halved with pits removed
- 1 tbsp Chinese almonds (also known as south apricot kernels)
Fruit, optional
- 120 g rock sugar, or to taste
- 1 piece of ginger (around 4 cm x 1 cm in size), peeled
- 2 tbsp goji berries

Method

1. Soak the dried snow fungus in warm water for ten minutes until soft.
2. Remove the snow fungus from water and use scissors to cut away any orange and brown bits that are hard. Cut the snow fungus into smaller pieces so they are easy to eat.
3. Rinse red dates and Chinese almonds.
4. Add 2 litres water, snow fungus, red dates, Chinese almonds (and fruit, if using) to a large pot on high heat and bring to a boil, then lower to a simmer for 30 minutes. If adding fruit, you may need to let it simmer for more than 30 minutes, until the fruit is soft.
5. Add rock sugar to taste.
6. Add goji berries and simmer for five minutes. Remove from heat.
7. Ladle into bowls and serve while hot.

Note

• If you prefer your snow fungus to maintain a bit of crunch, reduce the simmering time to 20 minutes. All ingredients can be purchased at an Asian supermarket.

My mum will turn her 90-year old in June 2024. She is getting desperately alert of my health and wellness day by day; she shares all her knowledge and practice to me over the phone & text messages whenever she remembers something about health.

With the love of my mum, I started doing more research on heath and wellness, in particular, the functional mushrooms. Here you go, I will recommend Lion's Mane mushroom to my mum to strenth her memory and recall me more of her experience.
