Pickles will tell you when something has gone wrong and this is a great example.
These jars were made from the same batch, but the jar on the left has clearly failed. The cloudy brine and change in appearance are strong signs that something isnโt right.
A failed batch can happen for several reasons, including:
- A jar that hasnโt sealed correctly
- Contamination during preparation
- Wild yeast or microorganisms naturally present on the vegetables
- An inappropriate level of acidity
In this case, I suspect contamination, possibly a wild yeast on the onions or an issue with the seal.
The important lesson? Never taste a questionable jar to find out. If a preserve looks unusual, the seal has failed, the lid is bulging, it leaks, fizzes unexpectedly or smells wrong, throw it away.
When in doubt, throw it out. One jar of pickles is never worth the risk!
