Winter vegetables, but make them memorable. 🍂

This beautiful recipe from Chef Ben Dowling at Tulum Store brings together roasted farmgate produce with all the warmth and depth winter cooking calls for. Think Kent pumpkin, Jerusalem artichoke and cipollini onions, finished with garam masala, smoked almond and date brown butter for something rich, fragrant and full of character.

With winter vegetables from Torello Farm , Paringa Estate Winery & Restaurant verjus and Scorpo Estate olive oil, it’s a dish that celebrates the kind of local ingredients that shine at this time of year.
