Risotto alla Milanese, roast fennel, saffron and garlic purée, parmesan, parsley.
Legend says Risotto alla Milanese was created in 1574 by a prankster assistant glassmaker known as "Zafferano" (Saffron). While preparing the stained glass for Milan's Duomo, he secretly added the expensive yellow pigment to the wedding rice of his master’s daughter. The golden dish was an instant hit.
