Happy Father’s Day to the dads who show up, keep us laughing, teach us the important stuff (and the stuff we probably shouldn’t repeat 😏).

And to the stepdads, bonus dads, father figures and the good men who step up, stick around and choose to be there.

Happy Father’s Day from all of us at The Knick! 🍕❤️

It’s Virgo season, and chef’s favourite Virgo is obsessed with Mexican food.

Naturally, there was only one thing to do — deliver his take on a Mexican pizza.

Fuego & Maíz
potato,
chorizo,
sweet corn,
housemade salsa roja,
queso fresco,
white onion,
coriander & lime

A celebration of authentic, homestyle Mexican flavours with his own little twist.

Simple ingredients, big flavour, and a whole lot of love behind the pass.

This one is already feeling like a favourite.

Was so good to walk into the restaurant this morning and see our new name up in lights.

It’s been a literal race to the finish line — and somehow, we just made it!

We’re officially ready to serve you as The Knick Pizza & Bar, and we absolutely couldn’t have done it without the village of people who helped get us here.

A huge thank you to Laz 🦋 for helping us update our website and digital footprint — and for dragging Dane Hoey in for a little hello. We’ve definitely missed him in the kitchen.

Tim Scott , thank you for the incredible designs and your continued patience. In a world full of AI slop, you’ve made The Knick look very, very schmick.

And Renee & Brent from Digital Synergy — who’ve been doing our signage from day one. You’re absolute pros, we love your work, and you genuinely saved our arses (and our “i”) this week. We apologise for choosing all the weird fonts.

And last, but not least, we’re incredibly grateful to our friends and family who have supported us through the past couple of months.

Now, as restaurateurs, we’ll tell you that everything will calm down next week.

But… y’all have heard that from us before. 🙃

The Knick is officially open. Let’s do this!

Great news — the Derby is back, and this time it’s on the menu for good.

Simple, but absolutely delicious.

THE DERBY
Iceberg wedge
crunchy bits
bacon
buttermilk dressing
seasonal herbs

You know it has to be good when a 12-year-old kid requests it for an after-sport treat.

Austen’s pro-tip: sop up any leftover dressing with your pizza crust.

We’ll take that as a pretty solid review.

Well… it’s finally time to make it official.

From Tuesday 25 August, we’ll officially be trading as The Knick Pizza & Bar.

While a name change was always on the cards, sometimes the universe has a funny way of making the decision for you. And rather than risk anyone confusing us for something we’re not, we decided it was time to make the change official.

So, our name may have been knicked, but our food, our people and our commitment to our community remain exactly where they belong — right here, tucked away in West Ashgrove.

Same team. Same pizza. Same place you know and love.
Just a new name.

Welcome to The Knick.

Restaurants are about so much more than food. They’re where birthdays are celebrated, milestones are marked, friendships are nurtured, and comfort is found after a long day. They are places where people come to feel welcome, looked after, and at home.

Over the coming weeks, you’ll notice our branding beginning to change. While things may look a little different on the outside, that’s where the changes end.

Our food isn’t changing. Our service isn’t changing. And our commitment to creating a place where you come to celebrate, connect, and feel genuinely cared for will never change.

Thank you for believing in us, supporting us, and allowing us to be part of your special moments. We can’t wait to share this next chapter with you. 💚🖤

25 years of recipes, memories & a whole lot of love.

Behind every dish is a story — and our chef has been collecting those stories on recipe cards for more than 25 years.

Some are handwritten, some are well-loved and stained from years in the kitchen, and each one represents a recipe, an idea, a place or a moment that has helped shape what we cook today.

These cards are more than recipes. They’re a little piece of our history — and a reminder that great food is built over time, one recipe at a time.

Here’s to 25+ years of cooking, creating, tweaking, tasting and sharing. ❤️
