Tasting is a daily part of working in coffee and it’s something we all do. In the industry, we call it cupping.

For a beginner it’s an odd ritual and it’s not something you’d usually do when you want a coffee – because we sip with a spoon, like soup. We also spit it out, like wine.

There is method to the madness though, as this system we all follow allows us to assess a coffee on its merits without being influenced by the brew method or other factors (as much as we can control anyway). It can help us:
- choose which coffees to buy
- calibrate a blend recipe
- QA test a roast batch
- help educate

It's a big part of how we all deliver your favourite coffees and blends every day, consistently. A globally agreed QA practice that you can find daily in a roastery or on a farm.

Run hot water into your cup for 5–8 seconds, empty it, dry the basket, dose and tamp, then brew. Aim for 25–30 seconds at about 1:2. Fuller, sweeter espresso at home.
