Chia doesn't rush. The seeds sit in almond milk for half an hour before they are ready, so the base gets made ahead and the glass is built when you order it.

Matcha chia at the bottom. Blueberry sauce through the middle. Coconut yoghurt, then a handful of the matcha granola we make ourselves.

We put it on the morning menu because we wanted something that doesn't sit heavy. Something you can have before work, or before a walk down the Yarra, or next to a coffee while you take your time.

We run Disciple's Zen blend here at Kaede in Abbotsford. It's lightly roasted and built for milk coffees, so it stays sweet through a latte instead of getting heavy on you. Cookies and cream up front, a bit of cherry, then caramel underneath. Honestly it's just a really nice coffee to sit with.

There's a certain kind of morning we've always hoped Kaede would give people. Not impressive exactly. More like settled. Somewhere you can take your time.

We wanted a space that doesn't ask much of you. Good Japanese food, good coffee, and a relaxing atmosphere.

We think a neighbourhood needs a cafe like that, and we're glad ours turned out to be in Abbotsford.

It started as a staff lunch. Scrambled eggs on rice, something fast between services. Then we were all eating it, every day. Then customers started asking what was in our bowls, and whether they could have some too.

So it earned its place on the menu. Soft, folded scrambled eggs over rice, a spoon of chilli crisp on top, miso soup, salad and pickles alongside. Nothing we set out to make, just the thing we kept coming back to.

Crumbed, fried, and finished with a soft egg that just barely sets.
Rice first. Then the katsu, golden, crunchy, still hot.
Egg sauce poured over, spring onion and pickled ginger on top.
Every bowl built to order, every time.

Most of what goes into a plate here happens before it ever reaches you. The slicing, the plating, the few seconds a barista spends getting the pour to sit just right. You don't really see any of it, and honestly you're not meant to. We just care that when it lands in front of you, it's the best version of itself.

That's the whole idea behind the food at Kaede. Take something simple, a katsu, a matcha, a coffee, and give it the time it deserves. It's a quiet kind of pride, but it's in everything we send out.

Kaede, KA-E-DE. Maple Tree, in Japanese.
The name comes from Yuki's love of nature, and that's the whole feeling of the place. Greenery tucked everywhere, warm and cosy, somewhere you actually want to slow down. 🍁
