Tiramisu Wedding Cake.
I’ve always loved this dessert in all its forms.
As an ice cream, as a Bavarian cream, as a mousse, as a croissant, in the classic form or in a single-serving glass, but in my opinion, I consider this wonderful dessert incomplete (I’m referring to the classic version).
For me, a dessert to be complete must have all three characteristics: soft, creamy, and crunchy (which the classic version lacks).For this cake in particular, I wanted to recreate a complete dessert, trying to give it a look that goes beyond the classic stereotypical look of the ladyfingers-covered type.
Here we have a Margherita sponge cake base, a more substantial sponge cake to support the weight of the mascarpone cream and Marsala Bombe pâté cream, ladyfingers (strictly homemade, not purchased) soaked in a coffee and dark chocolate elixir, a coffee and almond crumble, and finally, the Plastico Bianco and Nero chocolate flowers.

Every year I always say I won’t do it because I’m always busier than usual, especially because I have a hard time finding capable staff who are willing to do it and work hard. But then Christmas comes around and I can’t resist the temptation to make them.
