He started the restaurant with two missions: to popularize and modernize Armenian cuisine. Armenia is one of the oldest countries in the world, and the food tradition is just as old. This means that the techniques and recipes have been passed down from generation to generation for thousands of years. So we decided we needed to shake things up. Our ancestors knew nothing of jalapeno peppers or mozzarella cheese, but we are sure if they did, they certainly would have used them in their cuisine. So, while many restaurants are fusions between different cultures, ours is a fusion between the old and the new. By modernizing the presentation and tastes, we are also working to popularize Armenian food. Armenian food has influenced the cuisine of the neighboring countries and vice versa. Now, we want to demonstrate to the world the quality of Armenian cuisine, and showcase the similarities and differences between our cuisine and the neighboring countries’. Many things have changed in since 1998 when we opened. We have become the most respected restaurant in Armenia, having served dozens of world leaders and dignitaries. На одной из старых и уютных ереванских улиц, в здании 19-го века (пока сохраненном), маленький вход, по адресу Пушкина 10,открыл свои двери с чаянием получить новую жизнь, новое продолжение: восьмого декабря 1998 года "Долмама" в первый раз нашла своего госьтя, чтобы поделиться таинством переходящим из века в век, которое создавалось в лоне армянского семейного очага, и представить армянскую гастрономию в новом эстетическом ключе. "Долмама" это платформа,где генерируется прошедший через тысячалетия и продолжающийся эпос армянской кухни,вкус и душа которой получает осязаемые черты и становится образом мышления,стилем, и состоянием Вашей души.
