Kati roll is Street – Food originating from Indian City of Kolkata. In its original form, it is a Skewer – Roasted Kebab wrapped in a Parantha Bread. Not just a Snack it is infact a Complete Meal. In West Bengal, shops serving Rolls are mostly known as ‘Roll-er-dokaan’ and people use ‘Roll’ to refer to a Kati Roll. The name Kati comes from the skewer in which marinated Chicken, Meat, Fish or Paneer (Cottage Cheese) is cooked over Sigdi or Tandoor which makes the Kebabs soft, moist with a hint of Charcoal Aroma. The spices with which we marinate the kebabs are classified. It is custom-made – the Parantha is either cooked Plain or with an Egg. You have a choice in the linear filling of Kebab. Either Chicken / Mutton / Paneer (cottage cheese) / just Egg. This is layered with thin slices of tossed up red onions, green chillies, a dash of seasonings, sauces etc – with a squeeze of lime.
