The INCAS were most notable for establishing the INCA EMPIRE in PRE-COLUMBIAN AMERICA, which was centered in what is now PERU from 1438 to 1533, and represented the height of the Inca civilization. The Inca state was known as the KINGDOM OF CUZCO before 1438. Over the course of the Inca Empire, the Inca used conquest and peaceful assimilation to incorporate the territory of modern-day Peru, followed by a large portion of western South America, into their empire, centered on the ANDEAN mountain range. However, shortly after the Inca Civil War, the last SAPA INCA (emperor) of the Inca Empire was captured and killed on the orders of the conquistador FRANCISCO PIZARRO, marking the beginning of Spanish rule. The remnants of the empire retreated to the remote jungles of VILCABAMBA and established the small Neo-Inca State, which was conquered by the Spanish in 1572.

Each year, Americans observe National Hispanic Heritage Month from September 15 to October 15, by celebrating the histories, cultures and contributions of American citizens whose ancestors came from Spain, Mexico, the Caribbean and Central and South America.

The observation started in 1968 as Hispanic Heritage Week under President Lyndon Johnson and was expanded by President Ronald Reagan in 1988 to cover a 30-day period starting on September 15 and ending on October 15. It was enacted into law on August 17, 1988, on the approval of Public Law 100-402.

The day of September 15 is significant because it is the anniversary of independence for Latin American countries Costa Rica, El Salvador, Guatemala, Honduras and Nicaragua. In addition, Mexico and Chile celebrate their independence days on September 16 and September18, respectively. Also, Columbus Day or Día de la Raza, which is October 12, falls within this 30 day period

The Appeal of Peruvian Corn.

Peruvian corn has a long history, as it has been grown since 1200 BC at least.
Ancient farmers in Peru stand out today for their sophisticated approach to selecting and creating brand-new varieties in their day. These varieties were able to adapt to various climates and terrains, thus leading to the many Peruvian corn varieties enjoyed today.

In fact, a Spanish writer named Bernabé Cobo mentioned how ancient Peru had corn in a multitude of colors, ranging from red to black, purple, yellow, white, and even mixed.

Thanks to the efforts of ancient farmers, Peru continues to boast the largest number of corn varieties found anywhere on planet Earth.

Lomo Saltado

1. Why is it called Lomo Saltado?
Instead it is a cross-cultural marriage of a beef stir fry with indigenous, Peruvian potatoes called Lomo Saltado. Translated literally, the name seems to mean “jumped loin” or loin made to jump about.

2.What does Lomo Saltado taste like?
The Lomo Saltado tastes similar to the classic Chinese beef stir fry which was changed for suiting the Peruvian palate. The main differences between the lomo saltado and the classic Chinese beef stir fry is in the amount of ingredients and the use of two carbs, rice and french fries as side dishes.

3. Why is Lomo Saltado popular in Peru?
One of the most celebrated Peruvian dishes after Ceviche also has its origins in chifa: Lomo saltado, with its balance of Peruvian and Cantonese elements, is perhaps the strongest (and most delicious) example of the ingrained Chinese food culture in Peru.
