Black and white at first glance. Silence before the first cut.

Inspired by the "Salam" exhibition at next door to us, curated by .ibrahimzaki and the calligraphy on the plate is by him, this dessert begins in quiet contrast. But once your spoon breaks through, the flavours of our region reveal themselves. Bold, familiar, and deeply rooted in our culture.

What appears minimal unfolds into something rich with story.

هذه الحلوى مستوحاة من معرض "سلام"، تبدأ بتباين هادئ، لكن ما إن نقطع الحلوى تظهر نكهات المنطقة بوضوح. قوية، مألوفة، ومتجذرة في ثقافتنا.

This is your sign to end Iftar properly.

Our newest Ramadan dine-in creations at Gerbou are quickly becoming the most talked-about dishes on the table. The charcoal-grilled rolled kunafa arrives warm and crisp, its molten cheese centre wrapped in delicate crunch, finished with a light drizzle of syrup that keeps you going back for another bite.

Then comes the surprise. An Aseeda fondant that breaks open to reveal a soft, nostalgic ooze of the Aseeda , reminicent of home made meals rooted in Emirati heritage. And of course, our Um Ali. Comforting, familiar, and always the right choice.

أحدث إضافاتنا الرمضانية ‏للتناول في مطعم قربوا أصبحت سريعًا من أكثر الأطباق المطلوبة على المائدة. تصل كنافة الفحم الملفوفة دافئة ومقرمشة، بقلبٍ من الجبن الذائب محاط بطبقة خفيفة من القرمشة، ومختومة برشة من القطر تجعلك تعود لقطمةٍ أخرى.

Chef Ninad brings a refined international perspective shaped by years of discipline, technique, and global culinary exposure. His approach is structured, detail-oriented, and deeply focused on consistency and excellence.

Alongside him, Chef Raed brings a profound understanding of Arab cuisine. His knowledge of regional flavors, heritage recipes, and cultural nuances grounds our kitchen in authenticity and warmth.

Introducing the Tashkeel Artist Special, a limited edition dessert designed by renowned calligrapher Wissam Shawkat in collaboration with Tashkeel and Gerbou. Inspired by the Arabic word حب "love", this creation transforms a single concept into an edible artwork that unites taste, memory, and emotion.

The experience begins with a striking calligraphic presentation, splattered in red and framed with gold leaf to echo the passion and fleeting moments that shape human connection.

The red color that so often appears in Wissam's work is a homage to the very first ink his father bought him when he was a child. A red chocolate shell symbolizes how love first appears; glowing and effortless. Inside, layers unfold in deep tones that reflect the sweetness, weight and fire of love's discovery.

The ingredients are drawn from Wissam's homeland Iraq. Black sesame adds grounding and depth highlighting the grey periods in a relationship, the chili adds a spicy kick bringing boldness and intensity, mirroring the rhythms of ups and downs of real relationships. The lightness of the white highlights the peaceful moments, yet to uncover its truth, the guest must break through the surface.
