Nanking was Calcutta’s first Chinese restaurant. Established in 1924, it served authentic Chinese food for a very posh clientele. Violinists regaled customers as they entered and made their way to plush tables and an exquisite, enjoyable meal. Chicken Manchurian was invented in India by Nelson Wang in the 1970s. Wang, an Indian chef and restaurateur of Chinese origin was experimenting in the kitchen one day, mixing quintessentially Indian ingredients with soy sauce and cornstarch. Towards the end of the nineteenth century, Chinese citizens immigrated to Calcutta seeking different avenues of work. Although they came from different regions, they could be broadly classified as Cantonese carpenters, Hakka shoemakers and tannery workers, Hubeinese dentists, and Shandong silk traders. It was the Hakka tannery workers who established the first Chinatown in India and started the eateries that created the Indo-chinese cuisine we love today.
