"PANDAN CURRY �My experiments in the kitchen today gave birth to this stunning dish. A fusion of coastal southern Indian “Meen Moilee” aka fishy curry, and South East Asian herbs that I’m going to serve with Sri Lankan hoppers this week. Sounds utterly chaotic, I know! But the flavors come together in perfect symphony . The delicate sea bass perfectly compliments the sweet, spicy and aromatic curry that’s both subtle on the palette but packs a bouquet of flavors. ⠀

Preparations : ⠀
🥥This morning I made some pandang extract from pandanus leaves that is often used in south East Asian desserts like Kaya. It’s pairs beautifully with coconut. You can refrigerate for up to a week and use it in desserts too. Thank goodness for kibsons for always stocking my favorite Asian herbs and fruit! ⠀
🥥 cut of the top of an empty young coconut with a hacksaw to make a bowl for the curry⠀
🥥 thawed the gorgeous Chilean sea bass from ⠀

Poaching the sea bass : ⠀
🥥 In a small pan, temper the spices and herbs in a tsp of coconut oil. ⠀
🥥 add 1/2 cup of coconut cream ⠀
🥥 add 1 tsp of palm or brown sugar and season with salt. ⠀
🥥at this point you may choose to add a small portion vegetables to give the curry some texture. I used brocollini ⠀
🥥 place the fillet of fish (seasoned with salt) skin down so it’s half submerged into the curry and put the lid on⠀
🥥 poach fish for 10 minutes on low heat. ⠀

Now take the fish out and place in a pan or baking tray to broil in the oven for 5-6 minutes at 260c for the beautiful char ⠀

Serve the curry in the coconut shell with a garnish of mustard micro greens, cialntro or julienned lime leaves with the Sea bass" @ Dubai, United Arab Emirates
