And the best part?
It makes 16 slices at only ±190 calories & 6g protein per slice 🙌

Perfect for:
✔️ Quick breakfasts on busy mornings

✔️ Afternoon coffee treat
✔️ Healthy-ish dessert

Because let’s be honest… we all need something that feels like a treat but still supports our goals 🤍

Save this one — it’s about to become a weekly staple.

My perfect high-protein banana bread formula 👇

Dry
• 1 cup flour
• ½ cup vanilla protein powder
• 1 tsp baking soda
• ½ tsp salt
• 1 tsp cinnamon

Wet
• 3 bananas
• ½ cup Greek yogurt
• ¼ cup brown sugar or honey
• 1 egg + 1 egg white
• 2 tbsp milk

Method
1️⃣ Preheat oven to 180°C. Grease loaf tin.
2️⃣ Mash bananas until smooth.
3️⃣ Mix in wet ingredients.
4️⃣ Whisk dry ingredients separately.
5️⃣ Fold together gently (don’t overmix).
6️⃣ Add choc chips or nuts if you like.
7️⃣ Bake 50–60 mins until skewer comes out clean.
8️⃣ Cool before slicing (the hardest part 😄).

Hi, I’m Roxanne, founder of Little Lunch Co, mom of two, corporate girly.

Little Lunch Co was born from real life.
Busy days, tired evenings, and that constant question:
“How do I feed myself and my kids balanced meals when I’m running on empty?”

I care deeply about what we eat.
But the time, the planning, and the sheer decision fatigue can be overwhelming.

And I realised I couldn’t be the only parent feeling this way.

Little Lunch Co exists to take one thing off your to-do list, so feeding yourselves well feels achievable, not stressful. 🤍

POV: You “test baked” and created perfection.

When one part of the day is handled,
but the rest still needs snacks, fuel and zero thinking.

Same calm.
Same structure.
Just a different box.

Parents get it.

There’s a lot of conversation around food.
Very little around capacity.

Some seasons simply ask more of us, mentally, emotionally, practically.
And in those seasons, food often becomes the thing that feels hardest.

This isn’t a call to do more.
It’s a reminder that support matters.

Save this for when you need steadiness.
Share it with someone who could use a little less on their plate 🤍

Busy days don’t leave space for proper meals.
So we made space for them.

One less thing to think about. That’s the point.

Building Little Lunch Co. has reminded me that small details make the biggest difference, not just in food, but in business.

What started as a way to make children’s lunchboxes a little more nourishing (and parents’ mornings a little less chaotic) has grown into something so much more.

Quality. Consistency. Care.
Whether it’s a lunchbox, a project, or a partnership — those three things never fail.

Here’s to creating with intention, and feeding more than just appetites.
