A recent evening featuring The Gourmand, one of our Signature Menus and home to a few of our newest creations.

From smoked paprika & lemon prawns served on paella polenta, to pan-seared line fish with poached mussels and a delicate court bouillon, ending with a steamed Île Flottante finished with lime crème anglaise, almond tuile, and passion fruit curd.

Menus like these are the result of months of tasting, refining, and carefully balancing flavours until every dish earns its place at the table.

Some favourites are here to stay.

At Sage, we understand that food is more than flavour, for many of our regulars there are dishes that carry familiarity, comfort, and memory. They've become the "Sage Family Favourites" if you will. These are the dishes our clients return to time and time again, the ones that feel a little like a gran’s signature dish; loved, trusted, and deeply satisfying.

And just like those treasured recipes, they’re never truly static. We gently refine them over time, making small, thoughtful improvements that elevate the dish while preserving its heart.

It’s where our Signature Menus are reimagined. Where chefs create, taste, question, and refine. It’s not rushed, and it’s never random. Every flavour, every element is carefully considered before it earns its place on your table.

There’s a quiet balance in the process. Holding onto the dishes our regular guests have come to love, the ones that feel like a familiar, comforting favourite, while gently evolving them, improving them, and introducing something new to fall in love with.
