On my menu today was San Bei ji, loosely translated three cup chicken with ramen noodles. One of Taiwan’s most beloved food for good reason. I was taught this dish including numerous other dishes from a chef at a local eatery down the road where my son lives.
Taiwanese cuisine is a unique blend of Chinese , Japanese and indigenous flavours.
Soy sauce, sesame oil, shoaxing is the holy trinity, along with other aromatics.
