Because we're kicking off the Gr8teful Sweet Potato Series—and I decided our first stop shouldn't be pie at all.

Yep. Hummus.
Take one humble Southern sweet potato and send it on a little trip south of the Mediterranean.
Creamy. Earthy. Naturally sweet. Savory. A little unexpected.
This is what happens when Southern cooking keeps evolving.

THE SWEET POTATO — FIVE WAYS
Let’s start with something Southern.
The sweet potato.
It’s humble. It’s familiar. It’s been baked, mashed, candied, covered in marshmallows and served beside just about every Sunday dinner you can remember.
But what happens when we stop asking the sweet potato to be the side dish?
That’s the challenge this week.
One ingredient. Five dishes. Five completely different directions.
We’re going to take this earthy, naturally sweet Southern staple and see just how far it can travel. Savory. Sweet. Unexpected. Maybe even a little rebellious.
The goal isn’t to hide the sweet potato.
It’s to let the sweet potato show us what else it can be.
Over the next five dishes, we’ll take one humble ingredient and conduct five different arrangements around it—changing the technique, the texture, the supporting cast and the story while keeping that unmistakable sweet potato at the heart of it all.

Something New Is Cooking
Gr8teful is about to start a new culinary journey.
We’re going back to the beginning — the ingredients.
One humble ingredient.
Five different dishes.
Five different ways to look at something we may have taken for granted.
We’ll explore the ingredient from breakfast to dinner, sweet to savory, traditional to completely unexpected — all with that New Fangled Southern spirit.
And there’s another piece to this journey…
Some of these dishes will make their way into the Trail Kitchen — reimagined for the folks who camp, hike, travel, hunt, fish, or simply love good food wherever the road takes them.
This isn’t just about recipes.
It’s about curiosity.
It’s about creativity.
It’s about taking something humble and asking:
“What else can it become?”
Our first ingredient is already waiting.
And I think you’re going to be surprised by what we do with it.

I was going through old menus a very dear friend gave and I came across this on the back of one of the menus.
" Fine cooking cannot be rushed.
One of the principal ingredients is Time. "

A New Name. Same Kitchen. Bigger Story.
Some of you have been following me for years. You’ve watched me cook, create, experiment, serve, screw things up, figure things out, and occasionally make something pretty damn good.
For a long time, these pages carried my name.
Today, they have a new name:
Gr8teful.
And this isn't just a name change.
Gr8teful is a way of looking at food, life, and what comes next.
It’s Southern food—but not the way you might expect.
It’s the food we grew up loving, taken apart, reimagined, and put back together with a little more imagination. Traditional Southern ingredients. Modern techniques. Healthier approaches. A little hippie spirit. A lot of soul.
This is New Fangled Southern.
Black-eyed peas can become something unexpected.
Sweet potatoes can become something elegant.
Beans can become dessert.
Mushrooms can take the place of bacon.
And vegetables that have spent generations sitting beside the main course might finally get the spotlight.
Because I believe Southern food deserves to evolve without losing its soul.
Gr8teful is about that evolution.
It’s about cooking.
It’s about creativity.
It’s about experimentation.
It’s about stories around the table.
It’s about rediscovering humble ingredients and asking, “What else can we do with this?”
And maybe most importantly, it’s about being grateful that we get another chance to do something meaningful with what we’ve been given.
So welcome to the next chapter.
