Just got back from a beautiful trip to Iceland and Norway! 🇮🇸🇳🇴

As someone who loves discovering local food, I tried many dishes, and I was mesmerized by Norwegian beetroot salad, known as Rødbetesalat (I also loved their caramelized goat cheese, aka brown cheese.. more on that later).

I came home inspired and couldn’t resist putting my own spin on those flavors. After a few rounds of taste-testing, I’m excited to introduce our new Beetroot, Feta & Toasted Walnut Tea Sandwich.

It’s rustic, creamy, tangy, crunchy, and packed with flavors. I think it’s a great addition to our high tea menu, and I can’t wait for you to try it!

Today we celebrated our dear friend Tracy’s birthday at the courts with Burnt Almond Cake and iced coffee from oh Chai!. Bright sun, crazy crew, lots of pickleball, good food, and amazing company.
