There are 3 seats remaining for our communal dinner, happening the 26th. There will be plenty of hot food, candlelight, and a space to talk - about whatever. You can discuss how bizarre it is that we're having a dinner amongst the turmoil of the world, or how beautiful it is that a group of strangers can still come together for that kind of thing. You can plan seed swaps in hope of a gentle Spring, critique my playlist, or simply delve into the meal, and let your senses recuperate for an evening. And through it all, we'll be raising funds for a good organization, doing good work.

You can purchase a ticket at Sawhorse Cafe - simply ask at the counter. Cash or check only, please and thanks!

Did you know that generative AI is on route to consume more water than New Zealand by 2027, per Cornell research? That's water we need for our beloved plants, for our food! Here at IN WHITES, we are trying to embrace the beauty of the mess; in art, in food, in community. So long as it's human, we're in, and that's something we will always try to promote.

It's an expensive existence we are all living through right now. Costs are rising everywhere you turn, with no relief immediately in sight. While we love our more fine dining dinner concepts, the fact of the matter is they aren't currently sustainable; for us to put on, or you to buy a ticket for. We are going through a period of time where moments of joy and indulgence are needed for morale more than ever, yet they're often out of reach for the majority of us.

That's why for this dinner, and probably many more moving forward, we're going to switch things up a touch.

A Good Gathering will be family style service, with hearty fare shared among a communal table. Heaping mounds of winter vegetables, colorful and rejuvenating. Juicy roasts, golden and brown, baskets of bread, mounds of whipped butter, and a good old fashioned punch bowl, ladled out in careful frivolity. For an evening you'll forego feeling like strangers in the same city, and fill eachothers plates.

There will be 4 courses, batched bevvies of the teetotaler variety, plenty of candlelight, tunes, and chatter. We won't be releasing the menu ahead of time, and hope you'll trust us enough to come along anyway. We don't even know what's on for the evening yet! The market, and what's most plentiful at that moment, will determine our feast; partially as an exercise in seasonality during the bleakest of times, and also as a cost effective measure.

Tickets will go on sale this coming weekend, at Sawhorse Cafe. If you have dietary concerns or restrictions, we will still do our damndest to make it happen; there will be vegetarian options, and should you have allergies, just reach out - you'll still be fully satiated.

Here's to taking care of our neighbors, surviving the dark winter season, and still holding onto our small decadences - we need them for our spirits!

Things are s**tty, friends. All around, just... big ole' piles of s**t, the size of the snow mounds after that damn storm. When it heaps high, that means those of us who are able have to pick up a shovel, and start digging our way (and our neighbors' way) clear.

Our friends at Aids Resource recently underwent a massive financial blow, by losing upwards of 600k+ in state funding. They are currently scrambling to ensure they can continue to provide important services such as stigma free healthcare to HIV and STI positive patients, transgender support and health services, and ongoing mental health aid and resources. Aids Resource is a vital part of the Williamsport, and greater, community overall; particularly to the groups of people so regularly under fire anymore.

In Whites has always, and will always, be about feeding the people, and community, we are a part of. Help us, help them, to help everyone, by attending our upcoming communal dinner. It'll be a little different than our typical shindigs, so keep an eye out for further details in the coming days.

I wanted to take a moment to yet again thank everyone who purchased a ticket for Flora & Feast and supported not only In Whites but our fundraising for . We did our best to keep our food cost at 31%, and after a small payment to all those who helped work, we were able to donate $900 total. John and I have always had the goal of this project being focused on fundraising, but to see it really start to head that direction feels better than I can verbalize. I know the amount donated is not what matters, but I'm so proud of all who dined, were a part of the crew, and ultimately just said "let's do it!". You're all the coolest, best people I know. The world is really scary and unpredictable right now, but we have to remember the most important thing through it all - we have each other.

Thank you to everyone who attended Flora & Feast last night. Thank you to everyone who WANTED to be at Flora & Feast! It felt like putting on the coziest, most favorite sweater I own and hadn't worn in years. Familiar, warm, and just right. Sadly, though it's been seven years, I still struggle immensely with leaving the kitchen to come out to the dining room and speaking. All of my dinners have themes to them, more so stories, this one most of all. Forgive me for my lack of speech prowess, and accept my humble offering in written form. 🙏 I will endeavor to do better, which means we'll just need to do this again! But perhaps not until Spring graces us...we have resting to do, and vegetables to plant. All of my love, and I do so sincerely mean all of it, goes out to all of you. Thank you for always accepting me as I am, flower obsession & heart on my sleeve. 💕

After almost seven years, we're going back to those long table dinners at the cafe, and my heart couldn't be more full. Flora & Feast is a concept that I worked on in 2019 and was originally scheduled for that fateful year of 2020, before everything imploded. The difference in who I am as a person, a chef, and a creative from that time compared to now is almost indescribable.

The story of Flora & Feast is rooted in hard fought for self-acceptance and peace. It's a reflection of acknowledging softness in a rigid space and finally choosing to embrace that polar difference for its benefits instead of perceived faults. I'll share more over the coming weeks, but just know that this is primarily about looking in a mirror and finally choosing to love the image.

Tickets for this dinner will be sold exclusively in the cafe this time around, starting February 1st, 2025. Cash and check only, $100 per seat. There are sixteen seats available, and it's one night only (February 18th, 2025). This is a 21+ event (sorry, kiddos).

Profits gained through ticket sales will be donated directly to Williamsports AIDS Resource in an effort to support those who are also searching for self-acceptance, love, and peace.

What is IN WHITES?

IN WHITES is a pop-up dining experience, created and organized by Colleen Masteller and John Keefer. It began in 2017, when I (Colleen) was working at a local cafe, and was graciously offered the chance to use the space for my own creative endeavor. Since then, the project has grown into a mobile restaurant scenario, aiming to create connections and foster conversations among the citizen of Williamsport, PA and the greater central Pennsylvania region. The name refers to a chefs traditional uniform, or “whites”; to be “in whites” means you are in the moment of the kitchen: creating food, respecting ingredients, fostering important relationships with farmers, and sustainable relationships with customers. As a team, we aim to bring awareness to the beauty of the Pennsylvania region, and the valuable work our local farmers put into our their goods. We focus on seasonal, produce heavy, unique food that can stir the senses and the emotions. Thank-you for joining us at the table!
