*I like my pork extra smoky, so I load up
my maze smoker with oak and add it to Traeg-Dor for the first 3 hours.

Did a BBQ gig a couple of weeks ago and, as always, had a few of my cookbooks on the table, when THIS happened...

Guest (picking up a book): How much are these?

Me: $20

Guest (whistles): Wow, $20 for a book...?

(pause)

Me: Nope. $20 for 35 years of professional cooking experience, thousands of pounds of BBQ I've done, and hundreds of hours of research...I throw the paper in for free.

I REALLY need to hire a customer-friendly person for the book table so I can stay in the kitchen, where it's safe, lol. ;)

With a little planning and preparation, it’s no more complicated than cooking a whole pig. Plan on about 4 pounds of raw weight for each guest.
