📝 Ingredients:
For the meat:
• 3 lbs beef chuck roast (or short ribs)
• 1 onion (halved)
• 6 garlic cloves
• 4 cups beef broth
• Salt & pepper to taste
For the chile sauce:
• 4 dried guajillo chiles (seeded)
• 2 dried ancho chiles (seeded)
• 2 chipotle peppers in adobo (canned)
• 1 tsp cumin
• 1 tsp oregano
• 1 tsp paprika
• 1 tsp vinegar
• 1 cup broth (from meat)
For the tacos:
• Corn tortillas
• Oaxaca or mozzarella cheese
• Chopped onions & cilantro
• Lime wedges

🔥 Instructions:
1. Boil the chiles for 10 min until soft. Blend with chipotles, spices, vinegar & broth until smooth.
2. Sear the beef, then add onion, garlic, broth, and sauce to a large pot or Instant Pot.
3. Slow cook 3–4 hrs (or 1 hr in Instant Pot on high pressure). Shred the beef.
4. Strain and save the consommé (broth).
5. Dip tortillas in the consommé, place on hot skillet. Add cheese, shredded beef, and fold.
6. Cook until crispy, flipping once. Serve with a cup of consommé on the side for dipping.
