Summer season is in full swing and that means it’s a perfect time for refreshing, thirst quenching tea, hot or iced. Here’s my top tips for making the perfect brew:
Put your teabag or infuser in your cup/pot
Pour hot (rolling boil) water next to it. Not pouring directly on top gives the tea a moment to expand so that finer pieces aren’t flushed out of the mesh. Sorry, no microwave or keurig machines please.
Stir after a few minutes -3 for Green, 5 for Black, 7 for herbal- and remove the bag/infuser.
Test, reinsert if not strong enough for you, dilute with extra water if too strong.
* Some teas are great made with hot milk instead of hot water!
** Run green teas under the cold tap for a second to make them damp. This will prevent the leaves from scorching and giving a bitter taste.
*** Yes you can cold brew or make sun tea
Make a strong cup/pot of tea
Let it cool naturally
Transfer to a pitcher
Serve over ice
*life hack. If your tea looks cloudy it’s because it wasn’t cold enough before you put it in the fridge. Clear it back up, simply float a slice or two of any citrus fruit on the top.
All teas can be served hot or iced.

Tea solves almost everything.
This afternoon a mom visited my booth and had a grumpy third grader in tow. After a few attempts I persuaded the girl to have a peppermint tea sample. I was about to throw her empty cup in the trash but the look in her eye prompted me to offer her seconds. After 3 cups of tea and a sale she left smiling and told her mother that the tea washed her frown away!

In response to frequent demand from tea connoisseurs, I have four new teas:
- Awesome Assam is a pure, bold, Indian black tea with a good dose of caffeine
- Formosa Oolong is an healthy, earthy hybrid between green and black tea, from Taiwan
- Lapsang Souchong is a distinctive smoked tea from China
- Yerba Mate is an energizing, caffeinated detox tea from Argentina

Did you know you can make all of my teas into iced tea? If you want to stock up you’ll find me this weekend Iat the Ilwaco market on Saturday 10-4. There’s a fun run and it’s the 120th anniversary of the lighthouse. Then on Sunday I go across the Megler bridge to Astoria, OR.

Jack visited my traveling tea shop at the home show yesterday.

Someone called Lizzie II sent me a postcard of my former thatched cottage in England. It had beautiful gardens of fragrant and edible fruits, herbs, vegetables. After a year of planning and research I am ready to share my Mad Hatter Medicinal Collection. If you are like any of the famous characters, then you need a tea party with teas from this menu:
1. Mad Hatter - Yerbe Mate- An energizing detox brew from the finest source.
