I have no words 🥹 (actually I do). I didn’t think providing pizzas to Norway after winning as a dog could ever be beaten. It was a moment in time I tried to just soak in and enjoy. It’s hard to soak those moments in because when word gets out, you get busy and then you’re basically putting fires out as they come. Something none of you know is that while we changed our pizza dough 4 months ago, I’ve been tweaking it every single day. I’ve had issues I wasn’t happy with and it’s been a journey if you will. Every time I tried this or that and thought I had it, I didn’t. Earlier this week I realized something tiny that had changed from months ago that could be impacting my dough. I yet again revamped my recipe and more importantly my method. Saturday morning I came into the shop and was ready to make a pizza with my newest dough that I believed was it. The problem figured out, adjustments made…. We made a pizza, it came out of the oven and it was perfect. Months and months of frustration were over, the method and recipe were perfect and were saved (meaning i took notes on every single step, the time, the speed, the temps, everything). After the most frustrating months I finally nailed it. An hour later Spains pizza order came in. Hard work pays off. Champions are eating our pizza tonight. No one involved with tonight’s meal ever gave up. Don’t give up, work for everything you want in life no matter if it’s fu***ng pizza dough, or a fu***ng World Cup. Let’s fu***ng go!!! Congrats Spain! Enjoy the pizza, have a celebratory cocktail and a safe flight home. Thank you for trusting a bagel shop with your first meal as champions. Amazing.
