There’s always that one person who wonders about cottage food kitchens — sometimes loudly. So we want to show you exactly where your baked goods and salsas come from.
We’re a Texas Cottage Food Business with a Food Manager license, Food Handler license, full DSHS registration, and strict compliance with pH testing and proper canning procedures. Everything is prepackaged, labeled, and made with care.
And if you’ve been following our home‑selling adventure, you already know our kitchen has been on full display — showings, open houses, contractors, repairs, and photos online for months. Transparency isn’t new to us.
We’re proud to serve our communities with safe, quality products made right here in this kitchen, one oven, and business pantry.

We’re excited to share a few updates as we roll into fall at Casa Maya Fusion!

🍂 Seasonal Menu Is Back
Now that we’re officially returning to making our salsas, we’ll be moving back to a seasonal menu instead of weekly rotations. This helps us keep quality high and bring you the best of each season.

🍌 Banana Pudding — One Last Time This Year!
Several of you have asked… so yes, our banana pudding is back THIS Saturday for one final appearance before it takes a break until spring.
Remember: it’s always available on our preorder menu in pan size for your gatherings.

🎃 Pumpkin Bread Update
Our pumpkin bread will be PREORDER ONLY for now until the weather cools a bit. Once temps drop, we’ll add it back to the regular lineup.

🥣 New Item!!!
We’re adding something brand new to the lineup — our granola is officially finished and ready to join the menu!
We’ll be introducing it later this week and you can try samples this Saturday.

We’re firing the smokers back up and bringing our authentic habanero salsas back into full production! Each week, we’re highlighting one of our signature flavors — sharing its story, its inspiration, and the magic behind its name. And of course, we’re kicking things off with the salsa that started it all: El Original.
El Original is our smoked habanero salsa born from backyard BBQ nights, good friends, and one impatient chef who couldn’t wait for her veggies to grill. Instead, she tossed them onto the side of our grill master’s smoker — back when we only had one small smoker and weekly gatherings meant smoked brisket, pulled pork, and neighbors wandering over for a taste.
That accidental blend of heat + mesquite smoke had everyone losing their minds.
“OMG this salsa is AMAZING — you need to jar it!”
For a few years, our friends pushed us… and in 2020, we finally broke down, El Original was officially jarred and first sold at The Local Farmer in Mansfield, TX.
It’s named El Original because it truly is the original — the smoked habanero salsa that launched a business now spanning 14 salsas, apple butters, a full bakery line, and dry goods/mixes. Six years later, it’s still the heartbeat of our brand.
Our grill master slow‑smokes fresh vegetables, habaneros, and a blend of peppers over his special mesquite wood mix. Then our head chef adds her magic: spices, fresh lime juice for perfect acidity, chunky blending, stovetop cooking, and water‑bath canning.
Here’s to El Original — the salsa that built a family business, one smoky bite at a time.

Power finally kicked back on here (10:40pm), and we’re firing up the oven to bake as fast as we can to catch up. Because of the outage, we had to make a few adjustments to tomorrow’s menu so we can focus on what’s still possible with the time we have left.
****We ARE attempting to make both the pumpkin cinnamon rolls and the cinnamon rolls. If time runs out on us, we’ll prioritize the pumpkin cinnamon rolls so at least one of your favorites makes it to the booth. Fingers crossed.****
Our arrival time at the Waxahachie Farmers Market (Booth #7) has been updated to 9:30am since we’re running behind. Thank you for your patience — we’re hustling to bring you as much fresh‑baked goodness as we can after the outage.

Pre‑order customers: invoices weren’t sent because of the outage. If power returns and we can bake, we’ll message you and — you can pay at pickup.

Arlington took a direct hit from the storms earlier, (2:30pm ish) and our area’s power was knocked out completely. It came back for about an hour, but went down again — and it still hasn’t returned. Oncor is estimating around 8pm.
This outage has stalled all baking, especially our sourdough items that were in bulk rise when the power dropped. We’re doing everything we can to save the dough, but this delay will force menu adjustments once power is restored.
Thank you for your patience — we’re hoping the power comes back soon so we don’t lose everything we’ve been working on for tomorrows market.
