What is a tonic? For us it includes infused water, simple syrups & fermented apple cider vinegars infused with healing foods/herbs. They are tasty drizzled on yogurt; added to water, lemonade or seltzers; or taken by teaspoon. They can add variety to your everyday items...or soothe symptoms of a cold/sore throat (among others).

Tonics are created by extracting & preserving the nutrients of plants in sugar, honey or vinegar. There are many ways to make tonics. Many uses for tonics. And recipes galore out there. In our own practice we tend to make simple syrups & the infused vinegars the most. We don't get to caught up in exact measurements, it's more about taste, smell & what feels right intuitively.

Simply put, for a syrup you fill a pot with herbs, flowers, bark or fruit. Add water and bring to a boil. After simmering to reduce the liquid to 1/4 you strain the mixture. Add an equal amount of honey or sugar and reheat almost to boiling. Like magic ~ you've got a simple syrup.

Herbal & fruit simple syrups are something we not only love making, but use throughout the year! As the plants start to come to life around us, we are thinking about new combinations and our old favorites. You will find our small artisanal batches among the teas at the shop. They should be ready to go for our official opening in June (and maybe even for our soft opening in May 🌿
Tried & true favorites include: Strawberry Basil; Lilac; Lavender; Rose; Rhubarb
