In the grasslands of southern Brazil, the gaucho learned to cook over open fire, to work with his hands, and to share what he had with whoever arrived. That tradition still stands at the center of our dining room. Today, on National Gaucho Day, we honor the men and women who carry it, one skewer and one table at a time.
