I typically never interact on social media but I’m left no choice when there’s outright lies being told and people accept it as fact. First the interior of the building had to change so it would function as a proper kitchen with proper sanitation. It’s a tiny space and the long hallway was wasted space. Second, the old oven had to go because it was unreliable and breaking down every week. It was never used as a brick oven all those years. Pizzas were cooked on parchment paper and never touched the brick. We went with a conveyor oven because it produces consistency without having to babysit it constantly. We had to add 5% hydration to the dough to work in the new oven. The pizza sauce is the original recipe, absolutely nothing has changed. The subs are the same bread that is picked up fresh from the Italian Bakery every morning, the same spiced ham, the same sauce, and the same fresh vegetables that are cut fresh every morning. Yes, the pickles are now fresh instead of canned. That is the only change. Anyone that says different is lying or just voluntarily ignorant. We do use premade crusts for the frozens, which isn’t new. Prior to us owning it, all the frozens made at the end of the week were made with premade crusts. Bottom line, people saying that we’ve changed to cheap ingredients just to make a buck is an absolute lie. The opposite is true. The green peppers and pickles were canned prior to us owning it, now they’re not. The cheese is the same exact cheese that comes in large blocks from a Wisconsin dairy. Everyone is entitled to their own opinions and if you don’t like our food that makes me sad. We can’t please everyone but we are pleasing several hundred regular customers per week and are doing well. I grew up here and ate Dave’s and Poor Gary’s pizza my whole life. Was it always awesome? Not really. Sometimes it was burnt, sometimes the order was screwed up, and sometimes it was amazing. We’re always trying to improve and we’re always trying to appeal to as many people as possible. We know we’ve lost some customers and we’ve also gained some loyal customers. We want your business but we know pleasing everyone isn’t possible.
