Bringin’ back an oldie but a goodie this week - the Meatball - with scratchmade organic grass-fed beef meatballs, roasted garlic, red onion, and quite possibly the last crop of fresh basil from my dad’s garden before it gets too cold. 😢 It’s also our last service of October! A few weeks ago at Ribs, Rods & Rock N’ Roll, we had the pleasure of meeting Marcela who was trying our pizza for the very first time. Marcela is from Chile and we had so much fun reminiscing about our honeymoon beboppin’ around Chile and Argentina (now over a decade ago!) It was during this encounter that Marcela told us about the best pizza she had ever had... which brings us to this week’s special, “Marcela’s Favorite.” It features the most delicious, cozy combination of cheeses, chili infused local hot honey from our friends at Cusick Honey Farm in Burbank, and toasty walnuts. Hit us up at XIX Brewing Company this Friday and see if Marcela’s right!

FRIDAY: Starting at 5:30 PM we’re serving up the Elote (back by popular demand) featuring peak season South Dakota sweet corn harvested during the hottest weekend of the summer by our dear friends Liz and Kacie. Ladies, pies on the house if you see this.😘

And don’t miss our uber talented buddy Ben Rogue starting at 7:30! We’re huge fans and you will be, too.

SATURDAY: Wakey Wakey by the slice at XIX Brewing Company ! We’ll be on the west side of the building starting at 8:00 AM (during the parade!) Follow the smells.

It’s Oktoberfest in Vermillion! We’re popping up on Saturday at XIX Brewing Company immediately following the B**r Mile… which Gunnar is of course participating in with everyone’s favorite local trivia master, Doug. We’ll start serving around “noonish” given this is the first time he’s attempted such a feat.

This weekend’s special is a three-way collab featuring a XIX Brewing Company brew in Scholar’s MUSEstard, crafted by the folks at The Spicy Turntable. We’re using it as the base plus kraut, bratwurst… you know the drill. Add some fresh red onion, smoked gruyere and a generous sprinkle of Cyprus flake sea salt on the crust (pretzel style) and you’ve got the Oktoberfeast!

The game will be on and The Spicy Turntable will be set up with all kinds of samples (and stuff to purchase too!) Prost! 🍺🍕🌶️

PSA: We’re approaching the very end of the season, but the Colorado peaches are exquisite right now. Earlier this week my mom insisted we take one home and the kids could hardly believe how delicious they tasted when paired with ricotta, basil and balsamic vinegar. Come to XIX Brewing Company on Friday starting at 5:30 PM and find out for yourself!🍑

And just a note of gratitude. Last weekend we made a record 265 pizzas!!! Thank you to Ribs Rods & Rock’n Roll for another stellar event and to our dear friend Tony Clanton for once again inviting us to cook for his end of summer party. Thank you to Faith Stachowski and Jena Jones for all your hard work.💪And hugs to each and every person who stopped by to chat and enjoyed our food. We even collected some new menu inspiration… stay tuned!👀

September. One of the best months of the whole year in my opinion. Back in our school groove, Coyote football has returned, birthdays and wedding anniversaries... and pizza gigs! Lots of ‘em.

Starting this Friday at XIX Brewing Company!

When the kids were little, Grandma Deb decided they would learn the proper term for eggplant... “aubergine.” To this day, they still use it sometimes. Once again, my Dad’s garden is bursting and we’ve been tasked with ensuring none of the aubergine goes to waste. We’ll be roasting it with herbs (also from the garden) and pairing it with ‘Nduja, a smoky/spicy sausage from the Calabria region of Southern Italy.

Come put us to work and kick your Labor Day weekend off right!
