Tried getting my work done early today as I’ve got a busy ass day… Not a bad trim for this weekends brisket. Considering… it’s 4:45am, hadn’t had my first cup of coffee yet… and oh yeah that old rule… don’t try and catch a falling knife…. 🤦🏻‍♂️🤦🏻‍♂️🤦🏻‍♂️

Puncture wound in the wrist about had me puke… and then trying to go to bathroom to get bandages and not wake up the wife…. Slip on the dogs water dish and about got concussed. 💦💦💦

Think imma hold off on trimming other s**t till later. 🤷🏻‍♂️🤷🏻‍♂️🤷🏻‍♂️

By no means am I saying anyone who got a call today at the RCOA in Decatur didn’t deserve it. Rib ONLY cooks offs are hard … As I learned today… Cuz you have no other proteins to save you if you come up short on one or the other…. 🙁🙁🙁

But… I will say.. I’d turn in the same exact boxes time and time again and know I’d get different results. For some reason NTX just doesn’t like our Que. 😏😏😏
