350 lunches. One Saturday morning. And one very proud P.S. Taco crew!
This past Saturday, we had the privilege of serving the Courage Women’s Collective for the third year in a row, but this year looked a little different!
Instead of pulling up with the food truck like we have in years past, we had the opportunity to serve in a much bigger capacity and cater 350 boxed lunches, our largest individual boxed lunch order to date!
We prepared 175 P.S. Taco Salads, 175 Southwest Chicken Wraps, 200 Chili Lime Pineapple Fruit Cups & 150 Elote Cups.
This one took some planning! Supplies were ordered, prep started mid-week, and Saturday morning we were back at it at 5 AM putting every single meal together fresh and getting everything packed and out the door on time.
And we have to brag on the two members of our team who showed up early and worked right alongside us to make it happen. Y’all worked your tails off, stayed focused and helped us knock this thing out. We absolutely could not have executed an order this size the way we did without you. 💚 Thank you Rachel & Haley!
There’s something pretty special about being invited back year after year, and even more special when that opportunity grows. We’re incredibly thankful to Church at the Crossing Dothan and the Courage Women’s Collective for continuing to trust P.S. Taco Company to be a part of such a special event.
We are proud of what our little taco company has grown into. From serving our guests every day at our brick-and-mortar, to rolling out with the food truck, to taking on catering orders like this one — P.S. Taco Company-Dothan is a whole lot more than just tacos these days.
Whether we’re feeding a table of four or preparing 350 meals before most people have had their first cup of coffee 😂, we’re thankful for every opportunity we get to serve.
