My dad called my friend Jeremy, "Jeremundo". Then he eventually called him just "Mundo". I named the roasting company after him and the rest is history!

Introducing our latest Highland Collection, the Colombia Jaime Nuñez. We only have a small amount of this rare lot so it won’t be around long. It’s delicate and fruity, with notes of cranberry, plum, and tangerine.

A little about this exceptional coffee:

Process: Honey
Region: Palestina, Huila
Elevation: 1,950 MASL
Varietal: Orange Wush Wush

Wush Wush is a rare variety grown at high altitudes in fertile land which promotes a fruity, delicate coffee.

The producer, Jaime Nuñez is a part of an innovative project working towards enhancing biodiversity in coffee plantations and the surrounding area. To do this, they create floral corridors across their plantations to provide habitats for pollinators that play a crucial role in sustaining the ecosystem. 

Nuñez and farmers alike are adopting these sustainable practices, avoiding pesticides and protecting the environment. By doing this, they can also earn higher prices for their coffees.

Finally, a big thanks to long time Mundos regular and friend AJ and his son, August, for inviting us into their home and letting us partake in their morning coffee ritual.

The Fermentation Project is a collaboration between James Hoffmann, Lucia Solis and roasters around the world.

Mundos is incredibly honored to take part in this global coffee tasting experience, and to share it with you.

4 - 8oz boxes

Grown at Finca San Miguel Urias, owned by Hector and Lilian Leal, operated under Rueda Farms, Antigua Valley (genuine Antigua), between Ciudad Vieja and San Miguel Dueñas, and the variety is ~85% Caturra, ~15% H1 and some Bourbon. All of these lots were processed by Lucia Solis, who worked closely with the farm team to ensure the coffee was pulped, fermented, washed, and dried according to specification.

The goal of the Fermentation Project is to shed light on the less understood world of coffee fermentation. One lot of coffee, processed 4 ways to illustrate the effect different types of fermentation has on a coffee.

LACTOBACILLUS INOCULATED
Fermented for 48 hours, this fermentation enhances the production of organic acids, impacting the brightness and complexity of the coffee. 

MECHANICALLY DEMUCILAGED
Processed without fermentation to serve as the control. The profile of this coffee comes from growing practices and genetic varietal characteristics.

WILD FERMENTATION
Fermented for 48 hours with local wild microbes. This is the traditional method most coffees experience, where the mucilage is removed by the local microbe population.

YEAST INOCULATED
Fermented for 48 hours, this fermentation enhances the production of flavor precursors, impacting the body and complexity of the coffee.

Meet the new Kenya Kathakwa hitting the shelves and slow bar today. It’s a classic Kenyan, bright and juicy, with notes of orange marmalade, plum, and brown sugar.

Process: Washed
Region: Embu County
Elevation: 1,500 - 1,700 MASL
Varietal: Batian, Ruiru 11, SL28, SL34

Kathakwa Factory, part of the long standing Kibugu Farmers Cooperative Society, sits on the southern slopes of Mount Kenya, drawing cherry from more than 1,000 smallholder farmers straddling the Embu–Kirinyaga border. Ripe cherry is delivered daily and processed using Kenya’s traditional disc depulpers, followed by 24 hour wet fermentation and a clean water soak that ensures thorough mucilage removal and clarity in the cup. Coffees are slow dried on raised beds for 1–2 weeks, then carefully conditioned on site for moisture stability. Supported by Kibugu FCS’s agronomic training and pre-harvest financing, Kathakwa consistently delivers clean, structured Kenyan profiles with excellent physical preparation and grading reliability.
