Dinner yesterday! I was really in the mood for some old school smoked chicken! Smoked halfway through on my offset, then opened the fire box and pit smoked them low and slow over coals and hickory till done! I let them rest for about 15 minutes and every fiber of that chicken was tender, juicy, and oh so flavorful!
