This cake has been in the works for a while now…lots of planning, lots of mental preparation. It’s a BIG cake with a lot of details in the cake & the display. I was super proud of this cake & a little disappointed at the same time!
This Rapunzel themed cake displayed beautifully! It was awesome when it was all set up!! I created the display to make it look as if the cake was suspended from a swing hanging from a tree. Rapunzel’s hair streaming down from the cottage above the cake. Awesome cake design idea! I was super excited to create it!!
This cake was big & heavy!! As this cake sat out at room temperature, it started to lean….and crack in the middle tier. 🥲This cake was the decoration focal point of this celebration. And it is heart breaking to not only the customer but to me as well that the structure of the cake was compromised.
As a cake decorator, I pour my heart & soul into each cake that I create. It’s important to me that people are in awe of the cake’s beauty as well as delighted by how it tastes! Always!! Whether it is a little cake just for fun, or a grand cake that is meant to make a statement, my mission is still the same! I do pay very close attention to every detail!! Making sure that every bit of decor is placed just right, that the cake is well supported & kept cool as long as possible, that it is level & has the very best chance of standing tall & beautiful until it is cut & served to guests. I even pack each tier in ice & blast the air conditioning in the car while the cake is being transported!
Even when the cake is cut, I want it to be displayed nicely on the plate so it it appealing every step of the way, until the taste buds can relish in its delightful taste & texture. That’s a lot of thought & pressure that goes into each cake!!
I think people often forget that cake is just that….its cake! Cake is not a substance of sturdy & stable nature! It is meant to be moist & fluffy & delicious!
Tiered cake are heavy! This cake weighed close to 50lbs. That’s a lot to expect from something delicate like cake!
So extra steps are put into it to help it stay stable. Support dowels in each tier, sturdy cake plates between each layer. A sturdy & stable base. All elements have to be just right!
Room temperature also is a HUGE factor in how your cake will hold up. Cool buttercream frosting is very stable! Butter is semi-solid when it’s cool, but room temperature butter has a very different consistency! It’s soft & creamy—and tastes delicious but it’s not sturdy…. Display a cake in front of a window & you have an extra added element that is not favorable for the cake. A slight bump of the table it is displayed on can be detrimental to the cakes structure!!
I know I am rambling on but I want my customers to understand the risk factors that can affect their cake display. Ideally cakes would be able to remain refrigerated until they can be sat out immediately before photos are taken, then it is taken behind the scenes to be cut & plated where it can reach room temperature before it is served. In a perfect cake world, that would happen. Reality for most events is very different. So you do the best you can to go thru each step & you pray that the cake does not fall subject to environmental elements that jeopardize its integrity!! Lots of time & material are put into cakes & unfortunately not all factors are in the control of the baker. Please remember, cake is cake!
