BBQ Bounty!

Cooked two Chuck roasts, a plate of beef short ribs, and a bunch of steaks.
My friend let me borrow his pressure washer In exchange for some beef ribs and steak, some steaks are dinner for me and the wife, and the leftover beef rib and all the Chuck roast will be going into a chili I'll be making on Tuesday night to bring into work for Wednesday.

I've officially ran out of my oak wood stack and if I cook any more this year, I will have to get a few small stacks of cherry wood. It's looking like I'm done cooking for the year though. Gonna pressure wash this bad boi on the weekend, take the paint off it, then repaint it fully green!

Sunday's BBQ cook!

Made a small Prime Rib, a Brisket Flat, and some Pork Ribs.

Half of it for me and the wife, the other half paid for by a friend.

These are my favorite pork ribs I've made.

The Brisket was really weird.
Half of the brisket held at 205 while the other half kept at 180. When I rested it, it came out dry on one side and moist on the other. Refused to even out temp.

Oh well, it's going in my friend's chili, so I hope this ends up being the best chili he's ever made.

Today I made some Beef Ribs, Cowboy Candy Glazed Baby Back Ribs, a Tri Tip, and some Pork Shoulder.

I ate the tri tip too fast to get any pictures, but it was the best tri tip I've ever had.

These are my best beef ribs yet. The fat melts and dribbles out when you squeeze it.

Pork ribs were double glazed in my cowboy candy syrup.

Neighbors from Texas came by and they got real excited seeing my smoker. They told me they could smell it on the other side of the neighborhood.
Some younger guys rode by on bikes and the wife and I heard one of them say real quietly "away dang that's cool as s**t"

Every time I cook, I meet more neighbors who have something positive to say about the smoker or the smell of it. 🤠
Just wish I could serve this to them, but unfortunately that's not how bbq works 🥲

Today, I made a flat, a shoulder, some hanger , thighs, and various roasted veggies to make

Enchiladas will be sold to coworkers at work

Finally got to use my new Meco Chipotle chiles for the red sauce.

Brisket went with the red sauce, pork shoulder went with the green sauce.

Also, I think this may have been the best brisket I've ever made

End product of yesterday's cook!
2 and 4 Shoulders for my customer, and me and Jules had some steaks.

The briskets got much darker towards the end of their cook, but I didn't get a picture. Pulled em off the and placed em in my oven at about 3am to rest until 9am.

Very jealous that I couldn't have any 😔
My apartment smelled like brownies.

Howdy All!

Last night I made 2 double bone prime ribs and a boneless new york strip roast.

I gotta say, prime rib has got to be my favorite cut in Texas bbq.
The combination of the smoked skin, the steak, the smooth bite, the crispy fat, and the bone on the side.
Prime Rib and Dino Ribs are all I need in bbq!
Keep your brisket, keep your pork shoulder, I want a big ol cowboy slice off the roast!

This time I collected the bones for a beef broth Jules and I will be making for biscuits and gravy on Saturday morning next weekend.
