Coffee is roasted, rested, packed, and shipped within a tight window.

The coffee should taste the same at your home as it did here (considering your style of brewer!). The small amount of space for roasted coffee in our Roastery means we have no choice to but to ship out fresh coffee everyday. Coffee needs at least a couple days to degass and the shipping process of 2-5 days anywhere in the contiguous US allows that to happen naturally. Each bag has a valve that allows the release of CO2 in the coffee from the roasting process. The other upside is that's why it smells so delicious when you open the box! It's full of that lovely coffee smell!!

Decaf people unite!! We have a half-caff which is our Stormcloud. Or order a bag of full-caff and decaf and then make your own. It's a massive life improvement to control the amount of caffeine being consumed while loving chugging warm coffee in order to get the morning going.

If you don't know, the process to decaffeinate starts with us sending green coffee we've purchased to the to the SWP decaf plant in Vancouver, BC. The CHEMICAL-FREE 'Swiss Water Process', is the only process we've ever used! We always choose higher quality beans as we value our decaf drinkers highly!!
We roast our decafs with care as we do all our coffees. If you take a moment to think about it, decaf drinkers might adore coffee even more than the caffeine lovers!! They/You deserve good quality :)

Cooling some beloved French Roast. We're proud to keep our history of dark rich flavor with newer fruity offerings like the Burundi that is about to go live in the next day, as well as a very smooth and rich single origin Bali we have right now.

Peaceful shade allowing the seedlings to fliourish. Natural shade trees offer protection not only from the blistering sun but from the potentially damaging winds. Wind blowing, branches swaying safely...natural shade will outclass man-made shelters always and provide nutrients for growth.

If we weren't in the mountains this probably wouldn't happen so much! If our roastery were nearer a major port it would be different - we could even go pick up coffee ourselves. Our coffee, however, needs to be trucked over 2,500 miles to make it to us, up and over mountain passes and through our valley to 8,750ft. There's plenty of opportunity for straps on the pallets to be compromised from slamming on the brakes or twisting around tight curves. It keeps us strong needing to restack these up to 70kg bags! Lift with your legs!!

Most Guatemalan coffee farms use shade trees due to the intense nature of the daily sun in those parts of the world.
Without shade the plants would produce prolific amounts of fruit but the quality would suffer as the tree would be stressed from overproduction. Shade moderates temperature, slows cherry development and supports soil health and biodiversity.

Our coffee travels well. It's already traveled thousands of miles to get to us and, if it tastes great in Telluride, it should taste just as good on your kitchen counter. We think it does!
