We just wrapped up a fry cutting at Gochu Loco - West Coast Fire Grill, and these potatoes have our attention. 🍟🔥

Our food philosophy? Start with thoughtfully chosen ingredients, build flavor with care, and give everything on the plate a purpose. Sometimes the best approach is letting the potato be a potato—and saving the Loco for what we put on top.

We chose the coyote because it adapts, keeps moving, and doesn’t worry much about fitting into a box.

Our food carries that same spirit.

At Gochu Loco, Korean and Mexican flavors meet over fire—bold, unexpected, vibrant, and full of personality.

A lot of the work happens before the truck ever rolls.

This is part of the behind-the-scenes process of building Gochu Loco West Coast Fire Grill—testing, adjusting, tasting, and thinking through how each component works together.

For me, building flavor starts with the fundamentals. Heat. Texture. Balance. Technique. Then we keep working until everything has a reason for being on the plate.

We’re still in development, and I’m looking forward to sharing more of the process as Gochu Loco comes together.
