Creamy Garlic Parmesan Chicken Pasta

Ingredients:

12 oz fettuccine pasta (or pasta of choice)

2 tablespoons olive oil

1 lb chicken breast, cut into bite-sized strips

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and black pepper to taste

4 cloves garlic, minced

2 tablespoons butter

2 tablespoons all-purpose flour

2 cups chicken broth

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1/2 cup shredded mozzarella cheese

2 tablespoons chopped fresh parsley (for garnish)

Directions:

Cook pasta according to package directions until al dente. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Season chicken with garlic powder, Italian seasoning, salt, and pepper. Cook for 5–6 minutes until golden brown and fully cooked. Remove and set aside.

In the same skillet, melt butter. Add minced garlic and sauté for 1–2 minutes until fragrant.

Stir in flour and cook for 1 minute. Slowly whisk in chicken broth, ensuring no lumps remain.

Add heavy cream and bring to a gentle simmer. Stir in Parmesan and mozzarella until melted and creamy.

Return chicken to skillet and toss with the sauce. Add pasta and mix well to coat.

Garnish with fresh parsley and extra Parmesan before serving.

For the Cajun Chicken:

1.25 lbs boneless, skinless chicken breasts, sliced into strips

1 tbsp olive oil

1 tbsp Cajun seasoning

½ tsp smoked paprika

Salt & black pepper, to taste

For the Twisted Pasta & Sauce:

12 oz twisted pasta (rotini or fusilli)

2 tbsp butter

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

2 oz cream cheese

1 cup shredded mozzarella

½ cup grated Parmesan

½ tsp red pepper flakes (optional, for extra heat)

½ cup reserved pasta water (if needed to adjust sauce)

Optional Garnish:

Fresh parsley

Extra Parmesan

A drizzle of Cajun-spiced butter

Instructions

Step 1: Cook the Pasta
Bring salted water to a boil. Cook twisted pasta until al dente. Reserve ½ cup pasta water, drain, and set aside.

Step 2: Cook the Chicken
Pat chicken strips dry and season with Cajun seasoning, paprika, salt, and pepper.
Heat olive oil in a large skillet over medium-high heat. Sear chicken 3–4 minutes per side until golden and cooked through. Remove and set aside.

Step 3: Make the Mozzarella Alfredo Sauce
In the same skillet, melt butter and sauté garlic until fragrant (about 30 seconds).
Pour in chicken broth and heavy cream, stirring well.
Add cream cheese, whisking until smooth.
Stir in mozzarella and Parmesan until creamy. Sprinkle in red pepper flakes for spice.

Step 4: Combine Pasta & Chicken
Add cooked pasta into the sauce, tossing to coat.

3 tbsp butter

4 cloves garlic, minced

1½ cups heavy cream

6 oz Velveeta cheese, cubed

½ cup Parmesan, grated

½ tsp Cajun seasoning (adjust to taste)

½ tsp red pepper flakes (optional, for spice)

½ cup reserved pasta water (if needed)

Salt & black pepper, to taste

Optional Garnish:

Fresh parsley

Extra Parmesan

A sprinkle of Cajun seasoning

Salt & pepper, to taste

For the Creamy Cajun Butter Rotini:

12 oz rotini pasta

3 tbsp butter

4 cloves garlic, minced

1½ cups heavy cream

4 oz cream cheese (for richness)

1 cup shredded mozzarella

½ cup grated Parmesan

1 tsp Italian seasoning

½ tsp red pepper flakes (optional, for extra kick)

½ cup reserved pasta water (if needed)

Salt & pepper, to taste

Optional Garnish:

Fresh parsley

Extra mozzarella or Parmesan

A sprinkle of Cajun seasoning for color

Glazed Gingerbread Muffins

These moist and flavorful muffins are filled with warm spices and rich molasses, topped with a sweet glaze for a perfect treat.

Ingredients:

¾ cup un-sulphured or dark molasses (do not use blackstrap)
½ cup unsalted butter, cut into smaller pieces
2⅔ cups flour
2 tsp ground ginger
1½ tsp baking soda
1½ tsp ground cinnamon
½ tsp ground cloves
¼ tsp ground nutmeg
¼ tsp salt
½ cup brown sugar
½ cup sour cream or plain yogurt, room temperature
½ cup whole milk, room temperature
1 large egg, room temperature
Coarse sugar, for sprinkling

Lemon Glaze:
½ cup powdered sugar
1-2 tbsp fresh squeezed lemon juice, to taste

OR:

Vanilla Glaze:
½ cup powdered sugar
1-2 tbsp milk, to taste
½ tsp vanilla extract

Method:

Preheat and prepare:
Preheat your oven to 425°F (220°C). Thoroughly coat a muffin tray with cooking spray.

Melt and mix wet ingredients:
Place molasses and butter in a large microwave-safe bowl. Microwave for about 1 minute or until the butter melts. Stir well and set aside to cool.

Combine dry ingredients:
In a large bowl, whisk together the flour, ground ginger, baking soda, cinnamon, cloves, nutmeg, and salt until evenly mixed.

Mix wet ingredients with sugar and dairy:
To the cooled molasses mixture, add brown sugar, sour cream or yogurt, whole milk, and the well-beaten egg. Stir until fully combined.

Form the batter:
Gradually add the molasses mixture to the flour mixture. Stir gently until just combined; the batter will be thick and slightly lumpy. Avoid overmixing.

Fill and top:
Divide the batter among the prepared muffin cups, filling each to the top. Sprinkle coarse sugar over each muffin for a crunchy topping, if desired.

Bake:
Place the muffin tray in the oven and bake for 5 minutes at 425°F. Without opening the oven door, reduce the temperature to 350°F (175°C) and continue baking for 11-14 minutes or until a tester inserted in the center comes out clean.

Ingredients:
12 oz rigatoni pasta
1 lb steak (sirloin or ribeye), cut into bite-sized pieces
Salt & black pepper, to taste
1 tsp Italian seasoning
2 tbsp olive oil
1 tbsp butter
4 cloves garlic, minced
1 1/2 cups heavy cream
1/2 cup beef broth
1/4 cup honey
1/2 cup Parmesan cheese, grated
Fresh chopped parsley (for garnish)
Optional: red pepper flakes for a little kick

Instructions:
Cook rigatoni pasta in salted water according to package directions. Drain and set aside.

Season steak with salt, pepper, and Italian seasoning.

Heat olive oil in a large skillet over medium-high heat. Sear the steak for 2–3 minutes per side until nicely browned. Remove and set aside.

Steak and Cheddar Melt with Caramelized Onions on Grilled Bread

Ingredients:

For the Sandwich:

8 slices thick rustic or sourdough bread

1 lb ribeye or flank steak, grilled medium-rare and thinly sliced

1 ½ cups sharp cheddar cheese, shredded

1 large yellow onion, thinly sliced

2 tbsp unsalted butter (for onions)

2 tbsp unsalted butter (for bread)

2 tsp olive oil

Salt and pepper to taste

1 tbsp fresh parsley or chives, finely chopped

Instructions:

Caramelize Onions:

In a skillet over medium-low heat, add 2 tbsp butter and onions with a pinch of salt.

Cook slowly, stirring often, for 25–30 minutes until golden brown and sweet. Set aside.

Cook or Reheat Steak:

Season steak with salt and pepper. Grill or pan-sear over high heat until medium-rare (about 3–4 minutes per side).

Let rest, then thinly slice against the grain.

Assemble Sandwiches:

Lay out bread slices. On 4 slices, layer cheese, steak slices, caramelized onions, herbs, and more cheese.

Top with remaining bread slices.

Grill the Sandwiches:

Heat a skillet or griddle over medium heat. Butter the outside of each sandwich.

Grill each sandwich 3–4 minutes per side, pressing gently, until bread is golden and cheese is melted.

Serve:

Slice diagonally and serve warm on parchment paper.

Optional: serve with a side of crispy fries or a pickle spear.
