While a Chimichurri Rojo is an option, the most common Chimichurri here in the States is a Verde. The base for both is the same, parsley, garlic, oregano, red wine vinegar, and olive oil. Chimichurri is great with chicken, or steak, drizzled over veggies, or tossed with roasted cauliflower.

Ingredients:
1 small shallot, cut into wedges
ΒΎ cup flat-leaf parsley leaves
2 garlic cloves
1 tablespoon fresh oregano leaves
1Β½ teaspoon kosher salt
1 teaspoon freshly cracked black pepper
ΒΎ cup extra-virgin olive oil
ΒΌ cup red wine vinegar, plus more to taste
Β½ teaspoon red pepper flakes
In the base of a food processor, combine the shallot, parsley, oregano, garlic cloves, salt, and pepper. Pulse until well combined, but still slightly chunky.
Transfer the mixture to a small bowl. Add the olive oil, vinegar, and red pepper flakes. Stir to combine. Store refrigerated in an airtight container for up to 2 weeks.
