So from a couple of days ago... served on a bed of mixed greens, , , Falafels are fried, which I don’t eat fried foods generally but in olive oil they are packed with protein! I’m still perfecting the sauce... Will keep on making, love

After a long, cold, busy work week... it is!! My favorite cooking vessel was perfect for this little last minute creation. Hash browns with jalapeños and onions cooked golden brown then I cracked 4 eggs on top. In the middle of it all I poured a bit of beer and covered just until the eggs were perfect, we like ours with a runny yolk. Topped it all with cheese and fresh cilantro, served with sausage patties and artisan bread.
