Mutabel is an eggplant dip. I love it more than hummus. Fattoush is my all time favorite salad. It’s simple garden ingredients but its tossed with a tangy pomegranate dressing.

Background: Sarma (stuffed grape leaves)
Both are labor intensive dishes (sarma much more so), but the end results are worth the labor. Tabouleh is a tangy parsley-wheat salad. It’s so simple yet tasty. Sarma aka dolma is a rice mixture stuffed inside a grape leave (don’t ask me why - it’s tradition). Each sarma is rolled by hand - specifically my hand. Labor of love.

Skewers began when I moved to Spokane in 2009 and could not find authentic yummy Middle Eastern food that I had grown up with and loved! I started cooking it myself, for myself. Then I started sharing it with friends. And after some years, I was ready to share it with Spokane!
How can a city with a thriving food scene like Spokane not have Middle Eastern street food? I suppose we’ll never have a good answer, but we no longer need one. Spokane has Shawarma and Falafel and many more Middle Eastern classic dishes! Skewers is committed to traditional recipes!
Everything on the truck is fresh! We hate shortcuts. Nothing but the best, because our mission is simple: bring the Middle Eastern street food to Spokane. It’s not about anything else! I mean it.
Ok so, time for a confession. Behind the truck, there is no trained chef and no business degree. This comes with challenges. But it doesn’t change the commitment. And while there was no professional training, there was hours upon hours upon hours of trial and error and practice cooking at home.
I’m still learning and still tweaking things here and there. While I’m proud of the product, there is always room for improvement! But in the mean time, have some Pakhlava, because that’s one thing I can’t improve: it’s just that good.
