This layered ice cream cake is my absolute favorite summer dessert, and it always looks so stunning sitting right here on the white quartz counter in the warm natural lighting.
Ingredients:
1 package (14.3 ounces) chocolate sandwich cookies, divided
1/4 cup unsalted butter, melted
1.5 quarts vanilla ice cream, softened
1.5 quarts chocolate ice cream, softened
1 tub (8 ounces) whipped topping, thawed
1/4 cup chocolate syrup
Instructions:
Line the bottom of a 9-inch springform pan with parchment paper to prevent the cake from sticking.
Place about 24 chocolate sandwich cookies into a large zip-top bag and crush them with a rolling pin until you have fine crumbs.
Pour the melted butter into the crushed cookies and mix until the crumbs are evenly coated and resemble wet sand.
Press the buttered cookie crumbs firmly and evenly into the bottom of the prepared springform pan to form the crust.
Place the pan in the freezer for 15 minutes to allow the crust to set and harden.
Remove the pan from the freezer and spread the softened vanilla ice cream in an even, smooth layer over the frozen crust.
Crush 10 more chocolate sandwich cookies into slightly larger chunks and press them gently into the vanilla ice cream layer.
Return the pan to the freezer for 30 minutes until the vanilla layer is firm to the touch.
Take the pan out of the freezer and spread the softened chocolate ice cream evenly over the vanilla and cookie layer.
Place the cake back into the freezer for at least 4 hours, or until the entire cake is completely frozen and solid.
Carefully run a warm knife around the edge of the springform pan and release the outer ring to gently remove the cake.
Spread the thawed whipped topping generously over the top of the frozen cake, using a spatula or spoon to create beautiful thick swirls.

2 cups Blue Raspberry Powerade
10 Blue Raspberry Jolly Rancher candies
1/2 cup water
Instructions:
Unwrap the Blue Raspberry Jolly Rancher candies and place them into a small saucepan.
Pour the water into the saucepan with the hard candies.
Place the saucepan on the stove over medium-low heat.
Stir the mixture continuously until the candies are completely melted into a smooth, bright blue liquid.
Remove the saucepan from the heat and allow the sweet syrup to cool down to room temperature so it does not melt your plastic molds.
Pour the Blue Raspberry Powerade into a large pouring pitcher for easy handling.
Stir the cooled candy syrup into the Powerade until the mixture is fully combined and perfectly smooth.
Carefully pour the bright blue liquid into your popsicle molds, leaving a small gap at the top so the popsicles can expand as they freeze.

Ingredients:
4 cups shredded russet potatoes
1 cup shredded cheddar cheese
1/4 cup finely diced green jalapeΓ±o peppers
1/4 cup finely diced red bell pepper
1 large egg
2 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup vegetable oil
Instructions:
Place the shredded potatoes in a clean kitchen towel and wring it out tightly to squeeze out as much liquid as possible to ensure crispy hash browns.
Transfer the dried potatoes to a large mixing bowl and add the egg, flour, salt, and black pepper.
Mix the potato mixture thoroughly until all the shreds are evenly coated with the egg and flour binder.
In a separate small bowl, combine the shredded cheddar cheese, diced green jalapeΓ±o peppers, and diced red bell peppers.
Heat the vegetable oil in a large nonstick skillet over medium heat until the oil is shimmering.
