Lobster Salad

Lobster salad is an excellent choice for a luncheon or hot weather dinner. The salad can be served over lettuce leaves or used to fill sandwich buns.

If you are lucky enough to have a few freshly steamed lobsters, this is an excellent way to enjoy them. We enjoy lobster with butter, but a lobster salad is my favorite.

Arrange this lobster salad on lettuce leaves or mixed greens with avocado wedges or fresh sliced tomatoes around the edge of the plate. Or, use the lobster salad mixture to fill toasted hot dog rolls.

Lobsters are easy to steam or boil as long as you have a large pot. Once the lobsters are prepared you will need to know how to remove the meat for the salad.

Ingredients
1 pound cooked lobster meat, diced, from about 3 to 4 whole 1-pound lobsters
1 tablespoon fresh lemon juice
1/2 cup celery, thinly sliced
4 to 6 tablespoons mayonnaise, or more, to moisten
Kosher salt, to taste
Freshly ground black pepper, to taste
Mixed salad greens (or lettuce leaves)
Optional: 1 avocado (peeled, quartered, and brushed with lemon juice), sliced tomatoes, sliced cucumber
Gather the ingredients.

Ingredients for boiled lobster salad

Toss the cooked, diced lobster meat with lemon juice and the celery.

Dice lobster meat
Gently stir in mayonnaise and then season with salt and pepper, to taste.

Stir in mayo
Mound the lobster salad on lettuce leaves with a wedge of avocado, cucumber and tomatoes.

This lobster salad can also be used as the sandwich filling for a lobster roll in a sweet bun or in traditional toasted hot dog buns with lettuce.

How to Steam Lobster
Place a rack in a large pot. Add about 2 inches of salted water in the pot and bring the water to a boil over high heat.

Add the lobsters, cover the pot, and begin timing.

About halfway through the cooking time, lift the cover and shift the lobsters around with tongs.

Replace the cover and continue cooking.

1 to 1 1/4 pounds - 10 to 12 minutes
1 1/2 pounds - 18 minutes
2 pounds - 18 minutes

Cajun Fried Frog Legs,

In certain parts of the country, frog legs are a delicacy. When marinated and seasoned right, these delicate portions are spicy, delicious and perfect for your weekly date night.

Ingredients
12 individual frog legs
2 cups buttermilk
2 tablespoons, divided Cajun seasoning
2 tablespoons, divided garlic powder
2 tablespoons hot sauce
2 cups all-purpose flour
1 cup olive oil
1 cup peanut oil
Preparation
1 If necessary, with a sharp knife, separate each pair of frog legs into two individual legs.
2 In a plastic container with a lid, add the frog legs and buttermilk along with 1 tablespoon Cajun seasoning, 1 tablespoon garlic powder, hot sauce, salt, and pepper. Mix to combine and submerge the frog legs.
3 Seal the container and refrigerate for 2 hours.
4 In a colander over the sink, empty the frog legs into the colander and let the buttermilk mixture strain off. Transfer the still-soaked frog legs to a platter and sprinkle with more Cajun seasoning.
5 In a large mixing bowl, add the flour along with the remaining Cajun seasoning and garlic powder. Mix well.
6 Add the frog legs to the flour mixture and coat. Move the frog legs to a platter.
7 Preferred to use an electric deep fryer or you can use a large black iron skillet over medium-high heat, add the olive oil and peanut oil. Once the temperature reaches 350ºF add the first batch of frog legs. Fry until golden brown and remove to a paper towel-lined platter. Keep warm while you finish frying the rest of the frog legs.
8 Serve with your favorite side. Treat this like fried chicken wings

Bahamian style Conch Salad

Florida and the Bahamas, as well as most of the Caribbean, conch is abundant, free to divers and affordable for most people, and it is often served raw. This salad and many different variations on it are common throughout the Caribbean, where lambis (Creole for conch) is prized both for its sweet flavor and for its power as an aphrodisiac. Many places in the Bahamas make this salad to order, cracking the conch when you ask for it. Conch has become more widely available now that it is farm-raised, a fairly recent development. One pound of conch meat will make a hearty appetizer for 4 to 6 people. If you are starting with conch in the shell, you will need 3 large or 4 medium conch to yield one pound of conch meat. Sea salt is very important to this dish. In the Bahamas they use a moist sea salt from the island of Abaco, which is similar to the French fleur de sel. There is no black pepper or oil in this salad.

Serves 4 to 6 (generously) as an appetizer

Ingredients
1 pound conch meat (from 3 large or 4 medium conch)
Juice of 1 small juicy orange
Juice of 1 juicy lime
Juice of ½ juicy lemon
1 small onion (4 ounces), cut into 1/4 –inch dice
1 small tomato, cut into small dice
½ red or green bell pepper, cut into small dice
½ teaspoon minced habanero chile
1 Caribbean bird chile (or Thai chile), seeded and minced
½ teaspoon sea salt, or more to taste

Easy Conch Salad
Cleaned/ cubed conch- 1-2 pounds
2 cups Tomatoes
1 cup Onions
1 cup Red and Yellow Peppers
Half cup jalapeno Peppers
1 whole Lime
1 whole Lemon
I large Orange
Dash of salt.
Mix all ingredients , cover AND refrigerate for at least an hour and ENJOY!

I made this cool & refreshing conch salad last night . If you've ever been to the Bahamas you know It's a must have. Well. I'm blessed to live so close to the island that fresh conch is readily available. Thought I'd share the recipe. It's so easy to make.

Easy Conch Salad
Cleaned/ cubed conch- 1-2 pounds
